Cannellini Bean Dip

Ingredients

  • 2 (15oz) cans cannellini beans, drained and rinsed
  • 4 cloves garlic
  • 1/4 cup fresh lemon juice
  • Zest of one lemon
  • 2/3 cup olive oil
  • 2 tbls hot water
  • 1/2 cup fresh herbs. I used parsley and dill
  • Salt and pepper to taste
  • Pinch Chili flakes

Instructions

  • Place everything in a food processor
  • Pulse until the mixture is coarsely chopped.
  • Check for seasoning.
  • You may want to add more olive oil, lemon juice or hot water to get it to the consistency you want.
