Why it’s perfect: Forgiving, great seasoning builder.

Ingredients

  • 1 lb breakfast sausage or bacon
    4–5 potatoes (cubed)
    1 onion (optional)
    Salt & pepper
    Eggs (optional finish)

Directions

  1. Brown meat with 10 bottom / 6 top
  2. Add potatoes + onion
  3. Cover and cook 25–30 minutes, stirring occasionally
  4. Crack eggs on top if desired; cover 5 more minutes

Pro Move: Finish uncovered for crisp potatoes.
